Baked Chicken Chimichangas



8oz pkg. cream cheese

8oz. Pepperjack cheese, shredded

1 1/2 Tbsp. taco seasoning

1 lb. cooked chicken, shredded


8 flour tortillascooking sprayshredded cheddar cheesegreen onions, for garnishsour creamsalsa
Stir together cream cheese, Pepperjack cheese and taco seasoning.Fold in chicken.Divide among flour tortillas.Tuck in sides, and roll up each tortilla.Lay seam side down in a sprayed 9x13" baking dish.Spray tops of tortillas with cooking spray.Bake at 350 for 15 minutes.Turn chimi's over, and bake an additional 15 minutes.Serve with cheddar cheese, green onions, sour cream, and salsa.

Easiest Fudge




Easiest fudge recipe in the world, can't mess it up if you tried.

1 can Eagle brand condensed milk ( 14 oz )
1 1/2 bags of chocolate chips ( 11.5 oz bags is what I use) any flavor you wish
1 cup chopped walnuts ( optional )

Toss all ingredients in to a microwave bowl, melt till creamy pour into a 8x8 baking dish, cool for 2 hours cut and serve.

Cheesy Chicken Tater Tot Casserole

Ingredients:
1 (32 oz.) bag frozen tater tots
1 (3 oz.) bag bacon pieces
1 pound boneless, skinless chicken breasts, diced
2 cups shredded cheddar cheese
3/4 cup milk salt & pepper, to taste

Directions:
Spray slow cooker with nonstick cooking spray.

Layer half of the frozen tater tots on the bottom of the slow cooker. Sprinkle with 1/3 of the bacon pieces. Now top with 1/3 of the shredded cheese.

Add diced chicken on top. Season with salt & pepper.

Now add 1/3 of the bacon pieces and another 1/3 of shredded cheese.

Put the rest of the frozen tater tots on top. Finish with the remaining 1/3 cheddar cheese and remaining 1/3 of bacon pieces.

Pour 3/4 cup milk all over the top.

Cover and cook on low about 4-6 hours.

Linguini With Clam Sauce

Ingredients:
2 tbsp butter
1 tbsp olive oil
2 shallots, minced
2 garlic cloves, chopped
2 tbsp flour
1 8-oz jar clam juice
1/3 cup dry white wine
1 10-oz can chopped clams with juice
1/4 cup chopped fresh parsley
1 tsp fresh thyme
1 16-oz pkg linguine, cooked according to package directions

Directions:
Heat butter and oil in large skillet over medium-high heat. Add shallots and garlic and cook, stirring, 5 minutes. Add flour and cook 1 minute. Stir in clam juice, wine and clams and simmer 5 minutes. Stir in herbs; season to taste with salt and pepper. Pour sauce over cooked pasta and serve.

Butter Chicken

Ingredients

1/4 cup - butter

2 eggs

1 packages - chicken tenderloins

1 cup - ritz cracker crumbs

Prep time is 15 min, serves 4.

Directions

1 preheat oven to 350

2 put cracker crumbs and eggs into 2 different dishes

3 mix eggs and then dip each piece of chicken into the egg

4 coat chicken with cracker crumbs then place in baking dish

5 place tabs of butter around the chicken in the dish

6 bake for approximately 30 minutes or until chicken is completely done

Potato and Cheese Burritos

Ingredients

3 tablespoon - cooking oil

2 large - potatoes peel and chopped

1/2 medium - onion chopped

1 medium - tomato chopped

1 jalapeno chopped

1 cup - cheese shredded can be asadero or any available

1 dash - salt

1 dash - black pepper

4 flour tortillas

Prep time is 30 min, serves 4.

Directions

1 in a skillet fry potatoes until golden brown

2 add rest of ingredients except tortillas and cheese

3 if it is to dry just add like a quarter of a cup of water

4 heat tortillas they need to be soft

5 add potatoes to the tortilla and cheese and roll it

Sliced Baked Potatoes

Preheat oven to 375 degrees F (Can also do in Microwave for 6 plus minutes) Brush both side of potato slices with butter; place them on a cookie sheet. Bake in the preheated 400 degrees F oven for 30 to 40 minutes or until lightly browned on both sides, turning once.

When potatoes are ready, top with bacon, cheese, green onion; continue baking until the cheese has melted;

Add a dollop of sour cream when done and enjoy

Cinnamon Roll Pancakes

Ingredients:

PANCAKES
4 cups all-purpose flour
8 tsps baking powder
2 tsp. salt
4 cups milk
4 tbsps vegetable oil
4 large eggs, lightly beaten

CINNAMON FILLING
1 cup butter, melted
1 1/2 cup brown sugar, packed
2 tbsp ground cinnamon

CREAM CHEESE GLAZE
1/2 cup butter
4 oz. cream cheese
1 1/2 cups powdered sugar
1 tsp. vanilla

Directions:

To make the Cinnamon Filling: Mix the three ingredients together. Place in a disposable piping bag and snip the end off or put in a Ziploc bag and snip the corner off.

To make the Pancakes: Mix the dry ingredients in one bowl and the wet ingredients in another bowl. Stir them together until everything is moistened leaving a few lumps.

Heat your griddle to exactly 325 degrees. You don't want these too cook too quickly, and you won't want your cinnamon to burn.

Make desired size pancake on greased griddle and then using the piping bag and starting at the center of the pancake, create a cinnamon swirl. Wait until the pancake has lots of bubble before you try to turn it. You will find that when you turn it the cinnamon swirl will melt. The cinnamon will melt out and create the craters which the cream cheese glaze will fill.

To make the Cream Cheese Glaze: In a microwave safe bowl melt the butter and cream cheese and then stir together. Whisk in the powdered sugar and vanilla. Add a little milk if needed to make it a glaze consistency.

Place pancake on plate, then cover with cream cheese glaze
